Christophe's bread, a model for short circuits
Bread is a story!
When I look at the table in Christian Millau's Dictionnaire amoureux de la Gastronomie, I can't find "Pain". Yet bread is a wonderful friend of our meals. It accompanies us fresh, hot or toasted, right from breakfast. In an age when eating on the go has revolutionized the lives of bakers, sandwiches are a must. Perhaps it's at snack time that bread no longer finds its way into our schoolbags. As a child, I still remember a nice slice of farmhouse bread on which I'd spread farmhouse cream sprinkled with sugar. In the evening, it makes up for it: as croutons in the soup, to greedily sauté at the bottom of our plate of pasta bolognese, of course with cheese, and why not as French toast with a little jam on Sunday evening, just to end the week on a high note.
Choosing value-rich bread
Anyway, excuse this long introduction... all this to tell you that bread is a real subject for my culinary peregrinations. So I thought I'd tell you about my fellow traveler on the roads of Normandy: Christophe Lepetit, boulanger de France based in Bayeux. With his wife Sophie, they founded Boulangerie Capucine.
When I started thinking more than seriously about my kitchen project, I went to see him. I really wanted to work with him. He's always ready to say what's on his mind, with a smile. It's hard not to form a bond with him, I'd even say "with both of them"!
Christophe has turned his chaotic youth into a strength. He was always an entrepreneur, managing over 500 employees in his own company. Then a serious health accident alerted him to the need for a change of pace. So he became a boulanger de France, putting his own values at the heart of his new profession. The farmer who manages his grandfather's land supplies the wheat that is milled at Yannick Lecam's Moulin d'Etouvy. A fine example of the short circuit!
So, as long as I'm in her delivery radius, my guests enjoy bread from Boulangerie Capucine at every meal, from breakfast to dinner. Why deprive them of it 😉 ???
