Doing the market is a bit like praising slowness! I like it... no wonder, because doing the market means walking.
Going to the market means taking a stroll through the aisles methodically laid out by the shop assistant,
This walk sets the tone for the dish, which will be prepared with ingredients from the basket, and also for the brief exchanges with the person you haven't seen for a long time.
Going to the market gives you the time to linger over the vegetables on the market stall, and the time to stand and wait behind the lady putting her cheeses away in the back of her trolley.
At every market, I add a new artisanal delicacy to my list. It opens up my curiosity, allowing me to dare a new recipe.
